An Enthralling Experience 15 Years Old Speyside 57.5%

Nose: Wow! imagine flaming a Christmas pudding, honey-roasting pecan nuts and candied strawberries. Palate: Baked chocolate raspberry cake with layers of dark chocolate, silky chocolate buttercream and a raspberry filling with a chocolate raspberry ganache. Finish: Sweet red vermouth and gentian-herb bitters, garnished with a candied maraschino cocktail cherry. With a drop of water, if you wish, comes rice pudding served with a liberal dash of blackcurrant liqueur. To taste it was creamy, like a warm blueberry muffin or a walnut brownie. Following 12 years in an ex-bourbon hogshead, the whisky was transferred into a first fill Spanish oak oloroso hogshead.

Apple Wax 26 Year Old Speyside 41.7%

Tasting Notes; Nose: Here gives the lie to the notion that this is a lighter or in any way 'lesser' make. A superbly waxy and vividly fulsome aroma, full of buttery cereals, bruised apple skins, wine cellars, beeswax on old furniture and more playful hints of elderflower and gooseberry. -Water added to the weightier aspects with tobacco, banana skins, vellum and venison salami with a touch of rowan jelly. Palate: Immediately chock-full of waxy apples, old mead, cigar humidor notes, aniseed and fruity black coffee flavours. This promises to be a big, robust and complex whisky. Reduction enhanced these beautiful waxy components even further and added flavours of Bramley apple, chocolate gingers, further cigar impressions, crystallised citrus fruits and a final beeswax smooch in the aftertaste.

Candied Leather 15 Year Old Speyside 57.5%

Tasting Notes; Nose: Popcorn topped with freeze-dried raspberries, candied lemon peel, salt and powdered hessian. Palate: Pedro then joined the party, full of leather, ginger, treacle, and a honey and raisin puree. A tickle of water teased out toffee, mince pies and prunes on the nose, while the palate displayed strawberries and cranberries in salted caramel sauce. After 10 years in an ex-oloroso butt, the whisky was transferred to a first fill Spanish Oak Pedro Ximénez butt for the remainder of its maturation.

Cloudberries In Flam 14 Year Old Highland 57.8%

Tasting Notes; Nose: Blackcurrants were crushed by sticks of cinnamon and liquorice, before a drizzle of lemon juice, waxy green apple segments and a dollop of bread sauce. Palate: Warming fennel and sweet pea greeted the palate, with bergamot peel and a bouquet garni being used to spread jam on a wholemeal cracker. Water amplified the fennel and we now had a bag of salt liquorice being paired with a malty rye beer in Flåm as we sat on sheepskin rugs, nubuck leather and lilies. Finish: Reindeer steak, cloudberry liqueur and barley sugar.

Cloudberries In Flam 14 Year Old Highland 57.8%

Dangerously Gorgeous 20 Year Old Speyside 53.8%

Tasting Notes; Nose: Suggestions of honey on sandalwood, wintergreen, dusty flower pollens, fir wood sap and flowers in vase water. Holding everything together in the background: a lovely brittle waxiness. A distinctly old school profile we agreed. With water we noted mentholated tobaccos, dried mango, heather honey and hints of traditional IPA hops and limoncello. Palate: The mouth opened with a superbly vivid waxy texture and flavour. Some wonderfully honeyed qualities, herbal mouthwash, mothballs, citrus curds and exotic fruit teas. Gorgeous stuff! With reduction we found it became more medicinal and showcased a more balanced sweetness with herbal extracts, olive oil, resinous wood oils and lime cough drops.

Food Fusion 17 year Old Speyside 59.3%

Tasting Notes; Cooked Japanese udon noodles with spicy duck breast in a wok using plenty of sesame oil and a generous sprinkling of shichimi togarashi. On the side we had a Greek-style tuna and feta salad and to finish the meal, a shot of ouzo. It clearly was a foody dram. After the addition of water, we got spaghetti in a chilli and garlic sauce as well as a salade niçoise on the nose. To taste, we found an olive oil and balsamic dip for a chunky piece of herbed wholewheat bread. Following 14 years in an ex-bourbon hogshead, we transferred this whisky into a #4 heavy char first fill hogshead.

£9.10

Food Fusion 17 year Old Speyside 59.3%

Molasses Gummy Bears 16 Year old Highland 53%

Tasting Notes; Nose: Delightful aromas of a distilled cocktail made using black cherries, coal, treacle and oak. Then into a buffet of toffee, burnt toast, red wine, rum truffles and pomegranate molasses. Water added a delicate sophistication to the nose, with a posy of carnations, lilies and sweet pea flowers. Finish: ginger and chocolate biscuits, coffee cake, and dark fruit gummy bears. After 13 years in an ex-bourbon hogshead, we transferred this to a first fill barrique of US oak for the remainder of its maturation.

Piers, Papayas And Pineapple Pebbles 20 Year Old Islay 56.7%

Tasting Notes; In the shade of the pier a heather honey-glazed lobster sizzled on the barbecue. Fresh mint leaves were sprinkled over a wakame salad as we unpacked pastrami and oily pancetta. Then a wave of tropical juice crashed on to the shore, washing up papayas and pineapples like pebbles in the surf. With some water in the glass, comes chocolate limes among the gorse bushes and heather, while the clean seaside aromas of smoked clams and mussels bubbled from a pot of vongole broth. Oranges and guavas had now washed up alongside the pineapples, dotted with leaves of fresh herbs and pistachios. After spending 17 years in an ex-bourbon hogshead this was transferred to a second fill Spanish oak oloroso hogshead for the remainder of its maturation. This year, the SMWS are celebrating the 20-year journey of ambassador Olaf Meier at the Society. For two decades, Olaf has been the embodiment of passion and knowledge, sharing the art and joy of whisky with seasoned enthusiasts and curious explorers worldwide. Smokin'! 6 Year Highland (Islands) 58.1%

Tasting Notes; Nose: Descriptors for the aroma came fast and furious - gravadlax sauce, beech-smoked trout, black peppercorn-infused rye whisky and homemade sweet ploughman's pickle. What a change after the addition of water. Initially staying in the Caribbean with a warm Jamaican-style coffee and walnut cake followed by the sweet scent of cherry wood- smoked marshmallows. Palate: Is like smoked brisket pastrami prepared in a brine of pink curing salt, sugar and spices, alongside mild goat's cheese on Jamaican gingerbread - intrigued? You should be! With water, you can find a mixture between a smoked battenberg cake and tiramisu with smoked cocoa powder. 1st Fill Ex-Bourbon barrel matured.

Balvenie 17 Year Week Of Peat 49.4%

For one week each year, Speyside's Balvenie distillery mixes things up, switching from its usual unpeated style, to producing peated single malt with Speyside peat! Inspired by his findings on a trip to Islay, distillery manager Ian Millar initiated the annual project, proving that it's not all about Islay when it comes to splendid peated whisky. The classic honeyed sweetness of this deliciously rich malt brings marvellous balance to layers of elegant smoke. BenRiach Smoke Season 52.8%

Celebrating the time of year when Benriach produces it's peated spirit. Smoke Season is the distillery's smokiest whisky to date! While smoky whiskies used to be much more of a thing in the Speyside region many moons ago, that's not quite the case these days. However, Benriach has long produced peated spirit for a short while each year, and this expression shows off the fruits of that labour in its full splendour! Matured in a combination of bourbon barrels and virgin oak casks, this one packs a bold flavour profile. Tasting Notes; Nose: Cinder toffee, BBQ-charred pineapple, dry smoke with a touch of peppercorn. Palate: Thyme honey, scorched bread, ash, fresh lemon zest, another hint of tropical fruit. A no age statement cask-finished single malt from Glen Moray, this fruity expression is part of the distillery's Explorer range. Tasting Notes; Nose: Apple turnover, plum, caramelised nuts and citrus blossom, with honeyed orchard fruits. The Glenlivet Code 48%

The Glenlivet Code is the third instalment in a series that simply places an opaque black bottle before the industry and general public and invites them to see if they have what it takes to ‘unlock the spirit’. The idea behind the project is that the total lack of information will allow a drinker to experience the whisky without any potential preconceived notions about its flavour and character. You can’t simply look at the cask information, or the colour, to fill in the gaps. All we know about the mysterious bottling is that it was created using malted barley and it was made at the Speyside distillery.

Ardbeg An Oa 46.6%

An Oa is named after the Mull of Oa in the south west of Islay, which offers the Kildaton coast (where Ardbeg distillery is situated) some protection from the worst the Atlantic has to offer! As such, Ardbeg An Oa is intended to show a more approachable side to Ardbeg single malt that's as rounded as the Oa peninsula, without losing the characteristic distillery style. In the summer of 2017 this became the first addition to Ardbeg's core range in over a decade. Maturation took place in a combination of casks including Pedro Ximénez, charred virgin oak and ex-bourbon, which were all brought together to marry in Dr. Bill Lumsden's new 'Gathering Vat'! Tasting Notes; Nose: This sweet, creamy Ardbeg offers notes of butterscotch, fennel seed, tobacco leaf, Honey Nut Clusters and hints of mixed boiled sweets (fruit, Everton mint and menthol). The citrus notes are subtle and rich, coming through as flourless orange cake. Palate: Still plenty of peaty oomph, although perhaps lighter in body. Notes of cigars and golden syrup flapjacks with sweet black tea on the tail and hints of chocolate limes. Finish: Smoky treacle lingers with a little peanut brittle.

Nose: The nose brings puffs of charcoal and soot, which mingle with smoky wood, aromatic herbs and spices. From there, treacle toffee, hickory-smoked ham and cinnamon-dusted espresso rise up. Palate: The mouthfeel is alive with spice. Deep, warming smoke follows close behind, with notes of flame-grilled steak, chilli oil, cured leather and clove, leading to ginger and aniseed with an aromatic wood-smoke edge. Ardbeg Heavy Vapours Committee Release 50.2%

Nose: Smoke rises with a cloying sweetness. Intense, pungent and aromatic, a distinctive farmyard scent drifts, along with a crunchy aroma, like Creosote or tarry rope. A splash of water disturbs the vapours and dark chocolate cream billows, laced with a ribbon of smoked artichoke. Palate: Ardbeg’s untamed darker flavours and notes have risen. A burst of bittersweetness surges, disturbing ashy coal dust and casting a haze of cardamom, peppermint and coffee grits. Clouds of dark chocolate and mentholic eucalyptus roll in, obscuring the fruit and floral notes usually found at the heart of Ardbeg. Wisps of aniseed twists, cinnamon balls and antiseptic lozenges float on the palate. Fingers: The aftertaste lingers long and bold, with an almost anaesthetising sensation.

Nose: Multifaceted, notes of peat and little flourishes of dark sugar, freshly ground espresso beans, cereal notes and a most sophisticated tar. Palate: Led by sweet, ripe fruit and black forest honey. A good helping of malt. The throne then usurped by a powerful peat and smoked barley. Finish: Very long, caramel and malt weave their way through peat smoke and dark sugar and just a hint of fresh espresso coffee before it finally peters out. Overall: Such deft balance! How wonderful to sample Ardbeg so beautifully complimented by sherry.

Ardbeg Wee Beastie 5 Year Old 47.4%

Ardbeg's Wee Beastie is a youthful single malt drawn from a combination of ex-bourbon and Oloroso sherry casks, bottled at five years of age. Peaty notes sit at the fore for this one, with oak somewhat taking a back seat, as the liquid didn't stay inside the casks for too long. However, don't mistake that for meaning Wee Beastie is an uncomplex expression. It still packs a satisfying flavour profile that should impress many of the Ardbeg aficionados out there. Tasting Notes; Nose: Sea spray, rock pools, smoked malt and damp bonfire wood initially which waves of sweet and slightly vegetal smoke powers through. Hints of brown sugar, pear drops, a little vanilla and cooked apple add sweetness among notes of spare ribs, lemon sherbet, black pepper and wood shavings. I love this nose, it’s smoky and musty and like standing by a seaside bonfire. Palate: Pleasantly sweet and salty. Citrus oils and orchard fruits are present along with an unmistakable dark berry tartness which is joined by plenty of damp peat and dry wood smoke. Adding depth there’s pepper steak, creosote and then some touches of clove and liquorice. In the back-end, there’s a juicy sweetness from lychee and peaches as well as just a touch of salted caramel. Finish: Exceptionally long and oily. It’s a bit like sucking on a lemon sherbet and taking a great big whiff of some freshly cut peat.

Ardnahoe Infinite Loch 50%

The first core release from Islay's Ardnahoe Distillery, Infinite Loch was matured in a combination of bourbon and oloroso sherry casks. This single malt Scotch whisky was bottled at the distillery's preferred strength of 50% ABV, without artificial colouring or chill-filtration. The name was inspired by Loch Ardnahoe, located a stone’s throw from the distillery, who claim it's known on Islay as the ‘Infinite Loch’ because no one knows the extent of its ‘hidden depths’. Tasting Notes; Nose: Sea spray and coastal peat join zesty notes of orange oil and salted lemons, malt biscuits, and cocoa. Palate: Sweet and salty with a tangle of menthol and fresh fruits, and smouldering beach bonfire embers. Finish: Rich peat smoke and zesty citrus linger, with a touch of peppery warmth.

The Elements series from Laphroaig looks to explore the different aspects of production that make the beloved Islay distillery's whisky so unique! When making this second installment in the series, the team looked at interesting and unusual ways to experiment with their traditional fermentation process. Instead of using Laphroaig's usual 55-hour fermentation, this single malt was created from a number of longer fermentations, with some ranging up to nearly five days, and all together totalling 115 hours. Harking back to practices of old, the tun was specially aerated during fermentation to maintain mash conditions, and in turn, helped to enhance the fruitier character that can be found beneath Laphroaig's signature peat-led profile. Tasting Notes; Nose: Fruity and subtly coastal. Stewed apples, vanilla custard and zesty orange peel with subtle peaty notes. Palate: Fruity, sweet and salty. Glenmorangie 12 Year Old 40%

The flagship Glenmorangie Original has been reimagined by the Highland Distillery, with the minimum age of the whisky raised to at least 12 years old. The single malt Scotch, which won a gold medal at the World Whiskies Awards 2024 before it was even released to the public, was adapted by Dr Bill Lumsden, Glenmorangie’s director of whisky creation and his team as they felt there was extra silkiness, complexity, and sweetness to be gained by going to 12 years old. Tasting Notes; Nose: inviting with lots of orange – Jaffa Cakes and marmalade – initially. It retains this note throughout, every time you nose it again there’s more heaps of marmalade, spread on a buttery croissant for good measure. But stone fruits emerge too, think tinned peaches and nectarines, as well as banana bread, caramel shortbread, Brazil nuts, oak char, and a flowery perfumed quality. Palate: Soft and a little chalky, but also thick and tongue-coating in texture. There’s more orange and vanilla at its core, then comes apricot, dark chocolate, floral honeysuckle, lemon drop, pepper, and a warm, cosy flavour of pastries from a pâtisserie. Unveiled in August 2021, this expression from the Glenmorangie Distillery brings together the fruit-forward fabulousness of Glenmorangie's single malt with the rich, spicy depth imparted by Cognac casks! Glenmorangie’s head of whisky creation Dr. Bill Lumsden had experimented with Cognac casks before, but found they would overshadow the spirit's character. For this expression, however, Dr. Bill used Cognac casks that had been filled several times, resulting in a more subtle wood influence on the whisky. It was initially aged in ex-bourbon casks for eight years, before being finished in the aforenoted Cognac casks for a further four years, and then bottled up at 46% ABV. Glenmorangie A Tale of Ice Cream Limited Edition 46%

The Glenmorangie 'A Tale of...' series expands with another expression that reflects director of whisky creation Dr Bill Lumsden's sweet tooth. The good doctor was inspired by his favourite ice cream parlour to create this whisky, which is rich, creamy, and full of vanilla flavours. To achieve this, Lumsden selected casks rich in vanillin, the aromatic compound which brings vanilla flavours to whisky. The good people at Glenmorangie explain: "When you toast barrels, the lignin (which aids the wood’s structure) breaks down and releases compounds including vanillin. Glenmorangie’s high-vanillin casks were toasted in a particular way, to create higher concentrations of vanillin". Glenmorangie A Tale of Ice Cream represents the first time the distillery has used casks toasted to achieve this effect. This followed experimentation with a variety of different woods before selecting virgin oak casks toasted in this particular way. The press release also makes a point of noting that the whisky does not contain vanilla extract. Which would be ILLEGAL in Scotch whisky. Tasting Notes; Nose: A burst of Manuka honey, with lemon butter candy, baking raisin bread, candied orange peel, peaches, toffee and a hint of spice. With a splash of water, there is vanilla crème anglaise, a hint of coconut and a whiff of almond marzipan. Ledaig (Tobermory) 10 Year Old 46.3%

The Tobermory Distillery on the picturesque Isle of Mull isn't home to just unpeated whisky. It also makes superbly smoky single malt under the name of Ledaig (that name isn't simply a coincidence, by the way - Ledaig was one of the distillery's previous names). Distilled using the same pot stills as the classic unpeated Tobermory expression, just with peated barley instead. This particular expression ages for 10 years before bottled at the very specific strength of 46.3% ABV. Tasting Notes: Nose: Quite light and well-balanced. There is a very soft peat with a gentle smoke. Notes of barley and malt extract, with walnut and pine oil and a hint of iodine, dried fruit and nuts. Palate: Medium-bodied and quite rich. There are notes of spice and smoke gathering above the charred oak. The peat is quiet and dry with a touch of black pepper and earth. Finish: Medium-length and slightly smoky with spice.

Talisker Skye 45.8%

Introduced in 2015, Skye brings with it a well-rounded and sweet flavour profile packed with fresh citrus, sweet smoke, peppery spice and traditional maritime notes. It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks. Skye takes the distillery's classically rugged character and softens it out, while maintaining the smoky and sweet notes the distillery is known for. Talisker Skye whisky is perfect for those who perhaps find the classic Talisker flavour profile a bit too much, not to say that Talisker fans won't enjoy it too. Tasting Notes; Nose: Sweet stuff, toffees and vanilla ice cream up front, almost grain-like. Becomes increasingly honeyed. There's a little coastal influence here too, just hints of a sweet Caol Ila perhaps, with very restrained smoke. Palate: Honeyed toasted oak, sappy wood, only a little pepper and smoke, apple turnovers and hints of lemon and lime Opal Fruits. Fennel seeds. Finish: Drying and slightly less sweet, hints of spice and smoke.

Nikka Coffey Malt 45%

Nose: An interesting and slightly unusual nose. Lots of butter and bakery aromas mix with corn – there’s something of a hint of bourbon here. Honey and yellow fruits provide sweetness (lots of it) – melons and bananas in particular. There’s a slightly solvent-like edge that reminds me of Airfix model glue. Woodiness comes through nicely and combined with a pinch of nutmeg for spice. Taste: A light but reasonably mouth-coating arrival. Again, it’s somewhat bourbon-like – caramel, butterscotch and light vanilla join peaches and bananas and sweetened corns. Underneath there’s a pleasant chocolate flavour, and it pains me to say coffee, but coffee is there too. Again nutmeg in terms of light spicing. It’s all rather sweet, but not quite into the realms of saccharine. Finish: Short to medium and emphasising chocolate and sweet fruits.

Nikka Yoichi Single Malt 45%

Nose: Full-bodied, smooth. A mellow peat softly coats the aromatic palette at first, growing more powerful with time, as smoke, soot and salty notes transcend the initial nose. The aromas then evolve towards candied citrus fruit (lemon, orange), black liquorice and spices (nutmeg, ginger), and opens up with roots and dried twig aromas. Heady and floral (carnation, iris), it grows increasingly complex. Palate: Firm, powerful. A well-balanced attack gives equal footing to aromas of peat, smoke, spices, fresh fruit (melon, kiwi) and nuts (almond, walnut), which it delivers in spades. The mid-palate starts off with chocolate notes, but the peat soon takes the lead once again. Finish: Long, silky. Extremely mature, it overflows with ripe fruit (pear, Mirabelle plum, apple). The peat starts taking on an herbaceous and malty character, while the salty flavours gives the finish plenty of depth and coastal freshness. The final nose offers menthol, spicy (coriander, dill) and earthy (leather, chestnuts) notes.

Starward Nova Single Malt 41%

An ace Australian single malt from the Starward range, Nova spends its life maturing in casks that previously held Australian red wine, sources from wineries that produce some lovely Shiraz, Pinot Noir and Cabernet. In fact, the casks come right from the wineries, and are only lightly charred or steamed before whisky goes into them, ensuring that the wine's flavour profile has an impact on the spirit. Particularly decadent stuff, it does very well when pairing with rich foods as well as being enjoyed by itself. it's also rather good in cocktails that take advantage of the bold red fruit notes. Perhaps even a Manhattan...? Tasting Notes; Nose: Positively bursting with red fruit, strawberries with a Port-like mixture of fruit and nuts. Nose: Plenty of classic bourbon character is at the forefront of the nose but the cask influence adds balance and depth. Brown sugar, toasted almonds, jammy fruits, butterscotch, vanilla and orange peel combine initially, with delicate warmth and spice provided from ginger root underneath. A hint of Pinot Noir and stewed black cherry emerge as the nose develops, with milk chocolate, sandalwood and hints of leather. Palate: An initially deliciously silky delivery leads with rich caramel, floral notes and a suggestion of marmalade before chewy rye spice initially makes things more complex among savoury notes of roasted peanuts and a slightly bitter quality from charred wood, coffee beans and unsweetened dark chocolate. Dark cherry jam and stewed plums then burst through adding vibrant fruitiness alongside the sweetness of vanilla, cake batter, muscovado sugar and a hint of cola. Warmth from freshly-ground black pepper is present in the backdrop. Compass Box Spice Tree 46%

Unfortunately, due to its avant garde method of oak-aging, Compass Box were compelled by the powers that be to discontinue production. Undeterred, Compass Box worked with their cooper friends in both France and Scotland to develop a new, hybrid oak cask that would allow them to achieve similar results as the original product, but in a way that would be acceptable to even the most conservative of observers. Et voila, The Spice Tree was resurrected – matured using a custom-made cask with French oak for the heads and American oak for the body. The Spice Tree is a rich, intense malt whisky redolent of baking spices and layered with toasty oak accents that complement the underlying distillery character. It is a blended malt made from Highland malt whiskies and In April 2015, it was named Best Blended Malt Scotch at the San Francisco World Spirits Competition.
